Macaroni with Pea and Mint Sauce

Yields: 4 Servings

Ingredients

275g Gusto Nero Macaroni

1 Onion, chopped

3 cloves of garlic, sliced

500g of frozen peas, defrosted

2 Tablespoons of olive oil

A big handful of fresh mint

A big handful of walnuts

A big twist of black pepper

1 Teaspoon of sea salt

1- 2 Tablespoon(s) of nutritional yeast (optional)

Method

  1. Coat your largest pan with olive oil and add the chopped (or diced, it’s up to you!) onion. Bring the heat up to medium and fry for about 8 to 10 minutes until the onion is soft and golden brown. Now add in the garlic and stir for another few minutes; when it starts to smell lovely, you know you’ve done it right!
  2. Pop your pot on the next hob, and cook the peas in boiling water for 2-3 minutes until tender. Quickly drain it and set aside.

  3. Now, get out your food processor and tip everything in (yes, the peas, the cooked onion and garlic)! Add mint for a refreshing taste, sprinkle in salt and pepper, and if you’d like, put the nutritional yeast in too for a little added effect.

  4. Throw that big handful of walnuts into a dry frying pan, give if a few minutes of swishing back and forth on medium heat until nicely toasted. Set the walnuts aside.

  5. Moving on to the star of the show! Cook Gusto Nero’s macaroni as per instructions on the packet. Drain it well (we don’t deal with soggy macaroni here), top it plenty of warm and delicious pasta sauce, then stir to combine. Mmmm, mint!

  6. Serve with the toasted walnuts and fresh mint, and dig right in!
