Sesame Spaghetti with Vegetables

Yields: 4 Servings

Ingredients

250g Gusto Nero Spaghetti 

4 Cups of fresh, crunchy vegetables (baby carrots, baby corn, snow peas, red bell pepper), chopped

1 Tablespoon of olive oil

 

For the Sauce:

3 Cloves of garlic, minced

2 Tablespoons of grated fresh ginger

1/4  Cup of soy sauce

2 Tablespoons of rice vinegar

1 Tablespoon of sesame oil

1 Tablespoon of vegetable oil

1/4 Teaspoon of ground black pepper

1/8 Teaspoon of red chilli flakes

 

To Garnish:

Scallions, thinly sliced

Toasted sesame seeds

Method

Start by cooking the pasta!!

  1. Bring a saucepan of water to simmer over medium heat, add Gusto Nero spaghetti and cook for 12 – 13 minutes

    Meanwhile, let’s work on the veggies! 

  2. Whip out your skillet, add a tablespoon of olive oil and sauté the chopped vegetables until slightly soft, then remove from heat. This should take about 10 minutes, but it all depends on the size of your skillet and how finely you chop the vegetables, so best get out a fork and start poking!

    And finally … The Sauce! 

  3. Get out your mixing bowl and throw in the sauce ingredients. Whisk until it’s all combined, then if you haven’t already, drain your pasta and whip that in too.
  4. Toss in the vegetables and mix until evenly coated, then garnish with scallions and toasted sesame seeds.

    Serve Warm and Enjoy!
