Cheesy Pasta with Courgette and Peas

Ingredients

275 grams of Gusto Nero Macaroni

350 grams of chicken tenderloins, cubed

1 courgette, diced

100 grams of peas

1/2 red onion, finely chopped

2 cloves of garlic, minced

2 tablespoons of chopped fresh parsley

2 tablespoons of olive oil

120 grams of medium cheddar cheese

90 ml of double cream

Salt and pepper to taste

Method

  1. Sprinkle salt and pepper onto the chicken pieces to season, then pop them into your large frying pan and fry with one tablespoon of olive oil over medium-high heat for about 7 minutes. They’ll turn nice and golden when cooked, and that’s when you know it’s ready! Remove it from heat and set aside.

  2. Onto the pasta! Bring a pan of water to a boil, reduce the heat to medium, and pop in the macaroni. This should take about 14 minutes to cook; after that, tip the macaroni into the pasta strainer to get rid of any excess water. Don’t forget to then run it under cold water to prevent further cooking. We want our macaroni to be springy and tender, not sloppy and gooey!

  3. Use that same pan to heat up another tablespoon of oil. Toss in the red onion and courgette and fry until they soften. Now add the garlic and the peas, and fry until you can smell that tell-tale delicious whiff. Ahhh… Almost done!

  4. Stir in the Cheddar cheese and the cream, mix until well combined. Now sprinkle in the salt and pepper to taste and keep on low heat for 4 more minutes. Finally… Whip in the pasta, mix it all up, garnish with the parsley, and…

    Serve warm and enjoy!
