Caprese Chicken Pasta

Ingredients

250g Gusto Nero Fusilli pasta

2 Cups of fresh spinach, roughly chopped

500 Grams of cherry tomatoes

1/4 Cup of fresh basil leaves, thinly chopped

3 Cloves of garlic, minced

3 Tablespoons of olive oil: 2 for the chicken, 1 for the vegetables and some extra to toss with the pasta

750g of chicken breast fillets, cut into bite sized cubes

2 Measures of 1/2 teaspoon of salt (1/2 for the chicken, 1/2 for the vegetables)

2 Measures of 1/4 teaspoon of ground black pepper (1/4 for the chicken, 1/4 for the vegetables)

3 Tablespoons of balsamic vinegar

100g chopped mozzarella cheese, the fresher the better!

Method

  1. Bring a saucepan of water to a simmer over medium heat, add Gusto Nero Fusilli pasta and simmer for 10 minutes. Make sure the pasta is well submerged under the water or you’ll end up with the crunchy bits.
  2. All done? Drain the water and toss with a bit of olive oil to keep the pasta from sticking, set aside.

    Onto the chicken!

  3. Season the chopped chicken with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Meanwhile, heat 2 tablespoons of olive oil in a LARGE skillet (you’ll be adding lots of things to it), then pop in the chicken and cook until all the pinkness is gone. Set aside.
  4. Bring the heat down to medium and add 1 tablespoon olive oil. Throw in the tomatoes, minced garlic, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper and cook for a minute. Feel free to flip the skillet to mix the ingredients, because while that’s strictly not essential, isn’t it kind of cool?
  5. Reduce the heat to low and cook for 5 more minutes. Keep stirring gently; you’ll want the tomatoes to soften and wrinkle, not smashed; La Tomatina can wait. Toss in the balsamic vinegar and stir for half a minute.

    We’re nearly done!

  6. Get that skillet ready! Add the drained pasta, chicken, and spinach, then cook until the spinach starts to wilt. Quickly remove from heat and stir in the basil and mozzarella.

    Serve Warm and Enjoy!
